Darjeeling is one of the most famous black teas among lovers of our precious little green leaf. The spring harvests are the finest and most sought-after. But why? A quick overview of Darjeeling.

The classification of black teas is very widespread in northern India and more particularly in Darjeeling. Yes, before being a tea, Darjeeling is first a city and an Indian region. In this classification, to put it simply, the more letters there are, the finer and better the quality of the tea.

Our Darjeeling Gielle is a FTGFOP1, which means Finest Tippy Golden Flowery Orange Pekoe One . Bless you! In this awful mix of consonants, it is mainly the FOP (Flowery Orange Pekoe) that interests us. It designates a tea rich in buds . And precisely, the quality of a tea is found in its buds and their number. The more buds a tea has, the more qualitative and concentrated in theine it will be. A little reminder, theine is found in the buds.

A tea called "First Flush" is a spring tea . It was therefore harvested from March to April, just when it comes out of hibernation. Its leaves and buds are then the most tender, the richest in antioxidants and the freshest. Despite the cooking process that makes them black teas, spring darjeelings remain very "green" teas.

When infused, a spring Darjeeling is very light, similar to a green tea. There is no point in letting it brew for long minutes thinking that it will darken, this is not the case. You will only bring out its bitterness. When tasted, a spring Darjeeling is fresh with a very lively character . It has a slight astringency (dry sensation in the mouth).

🌱 What is black tea?

Contrary to popular belief, black tea can be less rich in theine than green tea. Because it is not because it has more tannins (more bitter, thicker, more colored) that it will be more theinated than other colors of tea.

🍵 How to prepare your black tea properly

Black teas are less fragile than green or white teas, so they are prepared between 80 and 90°C.

A black tea will infuse for between 3 and 5 minutes. More, if you like your teas full-bodied. But be careful, the longer the infusion and the higher the water temperature, the more bitterness develops.

These instructions are important because they help preserve not only the taste of the tea, but also its health-giving properties.

❄️ Cold infusion

Put 10 to 20g of tea in 1L of cold or room temperature water. Divide into two disposable tea bags Le Jardin de Mademoiselle. Iced tea is not an exact science: the colder the water and the larger the container, the slower the tea will infuse. Taste after the first hour. If it does not have enough flavor, add 30 minutes. Taste every additional 30 minutes until its flavors are diffused into the water.
